Your Perfect Pairs

We have tailored your tastings to hit your taste buds at perfect times, so follow the order below. The tasting flight will be set up from left to right, so #1 below is the pairing furthest to the left.

A SAVOURY START
To The left

Pepita Grande Verdejo White Wine

Our first wine is the Pepita Grande Verdejo white wine from Spain.

This is a great start to get your palate ready for a tasting. This crisp white is great for a summer

day and the refreshing citrus botanicals definitely make it a favourite amongst white wine drinkers!

+

Calamari with Squid Ink Aioli

We have paired this with savoury calamari rings and squid ink aioli made in house.

Why they are the perfect pair

Seafood is always a great match for white wines. The Pepita Grande cuts through the natural fat of the fish really well. The ailo sauce takes away the tartness of the wine and adds a great buttery finish to the palate.

THE SPANISH ROSE
In the middle

Enoloz Garnacha Rosé

The second tasting you will be indulging in is the Los Enoloz Garnacha Rosé from Spain.

France and Spain are the biggest producers of Rosé around the world. The grapes can grow in all sorts of soil and environments, making it a very popular variety across most regions. This Rosé is more dry than sweet. It limits its intake of sugar which allows the fruity, mineral flavours to come out.

+

Béchamel Croquettes

We have paired this with béchamel Croquettes with house made ranch sauce. Croquettes originated in France where they are usually filled with mashed potatoes but when they traveled down to Spain, they took on a very different taste.

Why they are the perfect pair

The Rosé brings out the sweetness in the cheese and the herbs in the ranch sauce is a great combination with the mineral flavours in the wine.

THE SPICY FINISH
To the right

Lodi Tempranillo Crianza

Your final tasting is the 2015 Lodi Tempranillo Crianza red from Spain.

Tempranillo grape is the most widely planted red grape in Spain and is often referred to as the “Royal” or “Noble” grape there. The name of the wine comes from “temprano” which means early in Spanish because this wine ripens several weeks earlier than most Spanish grapes!

+

Chorizo Tostada

We are matching this with a chorizo tostada with manchego cheese and pico de gallo.

Why they are the perfect pair

These two are such a great combination as red wine is always a hit with red meat. The wine is low in both acidity and sugar so it allows for the spicy flavours in the chorizo to come out. Notice how the manchego cheese brings out the zest in the wine as you combine it with the juicy pico de gallo.

This concludes the formal part of your Sidedoor experience…
