The first drink of your tasting is the Total Domination IPA from Ninkasi Brewing. As the most popular beer in Portland, Indian Pale Ales are a very hoppy and bitter type of beer that usually have fruity notes behind them.

Your IPA has been paired with some Baba Ghanouj to get you started. Baba Ghanouj is a dish made of mashed eggplant, tahini, lemon juice, and olive oil.
Why they are the perfect pair

Atlas Hard Apple Cider
Next in your tasting experience is a hard cider called Atlas Hard Apple Cider from Bend, OR.
The sweet apple taste comes from the freshly pressed apples sourced here in the Northwest. The sweetness is balanced by the tart flavor from Granny Smiths and a touch of Aronia berry gives a slightly dry finish; reminiscent of English ciders.

Falafel & Hummus
The cider has been paired with falafel and hummus. Falafel is a deep-fried ball, likely originating in Egypt, made from ground chickpeas and combined with plenty of herbs and spices.
Why they are the perfect pair
They are paired because ciders are fairly low impact, bright drinks that are driven in flavor by citrusy aromas. These flavors make a great connection with the spice-laden flavors of falafel and hummus and can bring out the nutty flavors of both.

Stella Artois Pilsner
Our final tasting is a Pilsner by Stella Artois.
Pilsner takes its name from the Czech city of Pilsen, where it was first produced in 1842. The world’s first blond lager is still produced there today!

Beef Dolma
Your pilsner has been paired with beef dolma.
A ‘dolma’ is a popular Mediterranean dish consisting of different ingredients, in this case, beef, which has been wrapped in vine leaves. Dolmas can be served either hot or cold.
Why they are the perfect pair
The pilsner has a soft maltiness that helps to integrate the acidity found in the preserved grape leaves of the dolma. The very light hoppy taste that is found in a pilsner helps to also bring out the flavor of the seasoned beef.
