Sotol and Chill


First up, you will be served Hacienda de Chihuahua Sotol. What is sotol you ask? Well, just like tequila and mezcal, sotol is made from the heart of the plant that it comes from. Sotol comes from a plant found high up in the mountain slopes of the Chihuahuan desert. The drink is named after the particular plant that it comes from: sotol. Though similar to an agave, it is in fact not related to the agave. This plant is also referred to as the Desert Spoon. 

Once the plant is harvested, it is steam roasted in ovens and triple distilled in a double column copper-still, then aged for two years in french oak barrels. When you smell the sotol, it should be smoky with a bit of savory, sweet aroma. 

Your food pairing is going to be Guac y Margy’s Chef’s selection taco.

Why they are the perfect pair

The sotol will be smooth and creamy to reflect the nature of the taco you will be enjoying. There will also be a bit of a bite from the sotol that will pair well with the other elements of the taco. The pairing should bring out flavors in both the taco and the sotol.

Sweat With A Bit Of Heat

The next in your tasting experience is Ilegal Mezcal with an orange slice. This drink will have a full body agave flavor with a bit of smokiness and a lingering heat. Some of the aroma you may pick up on is eucalyptus with hints of green apple, citrus and red chili.

Mezcal comes from the heart of an agave plant similar to tequila. All tequilas are mezcal but not all mezcal’s are tequila. How can this be? The difference, similar to whiskeys, bourbons and scotch, is mostly in the region that it comes from. 

Ilegal Mezcal with an orange slice will be paired with a taco selected by the chef.

Why they are the perfect pair

The mezcal will hit on every flavor of the taco: smokiness, sweetness, a little bit of heat, while the acidity will create a nice balance.


A Cozy Ending

Your final pairing from Guac y Margy’s is going to be Don Julio Reposado. The agaves that Don Julio use are from the Highlands of Jalisco. Once the agave is harvested, it is steam cooked for 72 hours. It is then fermented and double distilled in stainless steel pot-stills. The reposado is aged for eight months in american white oak barrels.

Your food pairing will be a chef selected taco.

Why they are the perfect pair

The taco will be warm and inviting, making you feel homey. The Don Julio Reposado is going to mimic this perfectly. It is a lighter, smoother tequila than what you are likely used to and has a very inviting aroma.
