A MATCH MADE IN HEAVEN
Your first wine pairing is a sparkling white wine and is made in the Charmat method, which is where the wine undergoes fermentation in a pressurised tank rather than in individual bottles. This pressure creates a soft, prosecco-like texture to the wine.
The sparkling wine will be paired with tonnato and ricotta.
Why they are the perfect pair
The dryness and bright flavor of The Diver is the perfect pairing for a smooth finishing texture. It is paired because the crisp acidity of the wine helps balance the acidity and creaminess.
Cleanse the Palate
Next up is going to be Hazel Jane’s White Blend wine paired with roasted beets.
Why they are the perfect pair
Pairing wine with salad items can be rather tricky to do. A salad that is dressed with something tart can completely knock out the flavors of the wine. The important thing here is making sure the acid in the wine meets or exceeds the acidity of the salad. There should be herbaceous notes in the wine that compliment the dish nicely.
RED MEETS RED
Last up on your tasting adventure, we have Hazel Jane’s red blend wine which will be paired with Coulotte Steak.
We know that you pair white wine with white protein and red wine with red protein, but why? Red wine pairs better with red meats because it is higher in tannins.
Why they are the perfect pair
Red wines have higher tannins which lends itself to have a deeper complexity. Therefore, red wines complement the rich, fattiness of red meat. The tannins on their own can be dry. However, when paired with red meat, the tannin molecules soften the fat in the meat, releasing more flavor.
