The earthiness and brine of the oyster bring out the crispness of the wine - especially any notes of pear or apple. Try adding some lemon to the oyster and you may taste notes of vanilla or honey in the wine.
Raw oysters aren’t everyone’s cup of tea but this is absolutely the best way to get out of your comfort zone and give them a try!

The creaminess of the chowder perfectly pairs with a smooth and refreshing white wine, while bringing out any buttery notes in the wine. The smokiness of the bacon in the chowder tends to highlight the fruitier notes in the wine, and vice versa.

Mermaid Fish Taco
Your final tasting is accompanied by a delicious Mermaid Fish Taco, a crispy shell made from gyoza skins filled with fried Pollock and topped with guacamole, chipotle aioli, and cilantro.
Why they are the perfect pair
The complex flavors of the taco, including the delicious spice of the chipotle aioli, require a more full-bodied red wine to balance it out.
This pairing does just that!
The pungency of the aioli and the heavier quality of the fried fish really bring out the dry-ness of the wine. Can you taste how the blackening spices on the fish enhance any coffee or pepper notes in the wine?
