A SWEET BEGINNING

Your first wine for this tasting is a Langhe Rosso by Luigi Giordano from Piedmont Italy. This is a unique blended Italian wine which is comprised of 90% Nebbiolo and 10% Arneis that is co-fermented. This is a rare, but traditional blend that originated in the Roero region of Italy. You will predominantly taste notes of blackberry, cherry and smokiness.

This has been paired with ‘Devils on Horseback’, which consists of medjool dates, smokey blue cheese, smoked bacon and aged balsamic. 

Why they are the perfect pair

This wine is going to bring out the smokiness of the blue cheese and bacon and complement the fruity texture of the dates.

SOMETHING EXOTIC

The next tasting is a Pinot Noir by Adelsheim from Willamette Valley, Oregon. You will notice notes of dried cherry, hibiscus, and rasberry on the more delicate, fruit notes and stronger notes of truffle mocha and plum for a deep complexity of flavors and subtle nuances.

This wine is paired with slow cooked pork ribs, which has fermented chili, pickled radish and herbs.

Why they are the perfect pair

This pairing makes a lot of sense when you consider lots of places braise their pork ribs with Pinot Noir. The Pinot Noir is going to pull out some earthy flavors in the seasoning of the ribs.


A Fitting Finish

For your final tasting you will have a Sauvignon Blanc by La Haubette from Loire Valley, France 2017. You will notice that this wine first by smell as it is bright and fresh with an intense aroma of citrus fruit. By taste, it will be refreshing and dry with a crisp acidity.

This wine has been paired with wood roasted grape toast which is sourdough, ricotta, sunflower seeds and golden raisins.

Why they are the perfect pair

Sauvignon Blanc wines are known for their remarkable balance between acidity and sugar. It's the acidity that allows it to encounter and a variety of difficult plate pairings. These little packs of flavor lend well to crisp white wines for a balance of sweet and savory. The notes of the wine are going to hit every note of the grape toast.
